Baking Tips:

  • Using a scale for baking ensures your non-liquid ingredients are measured accurately. Different ingredients have different densities and using volume measurement does not take into consideration this factor.

  • In this recipe, we used 85% dark chocolate, however 65% or 70% dark chocolate will also work perfectly well; we recommend you tailor the dark chocolate according to your sweetness preference. You can also use a sweeter chocolate for the chocolate squares you place at the fondant au chocolat ramekins (see step 4, sub-step 1).
